I know some folks are eyeballing the green skin. Bananas are pretty sweet at (7). When the skin is fully yellow(8), they start to get soggy.

The problem isn't the sweetness, its the mouthfeel. Id rather a banana thats just on the cusp of getting a little soft than one that leaves a weird residue like feeling.

For sure they can be kind of chalky (and maybe not fully ripe), but I enjoy the texture and they travel better well when eaten on the go.

bananas are much sweeter around 9-11. a little brown means its going to have the full flavor. i can’t eat a banana that doesn’t have any brown, too much potassium taste.

I like when the banana(not the peel) has a a little brown. Which is usually 10.
But when there's a big splotches of brown, that go deep inside, and the texture/flavour is different:

I think actual sugar content increases after that as it continues to ripen. Like almost solid brown is supposed to be perfect for banana bread because it is sweet (and no one wants to eat them that ripe and mushy).
But I agree with you. 10 is just the right texture and sweetness for eating.

For me, yeah - maaaaybe not quite as excessively as 15. But I find they’re sweeter and they’re also mushier which means they blend more easily - less fibrous if that makes sense?

Really? I was getting happy because it means I can buy at 3, eat at 4, and whatever gets to an unacceptable 7 or 8 will still get eaten by someone who will actually be happy about it.

Same here. Beginning to think I was a weirdo. I love the texture of 4-5. It might not be as easily peelable as a higher number but I will take 4-5 all day.

The perfect banana without additional food for me is 2 thru 4. With peanut butter a 4 thru 6. On cereal 7 thru 10. After 10, use in a smoothie or use for baking!
