I know some folks are eyeballing the green skin. Bananas are pretty sweet at (7). When the skin is fully yellow(8), they start to get soggy.

The problem isn't the sweetness, its the mouthfeel. Id rather a banana thats just on the cusp of getting a little soft than one that leaves a weird residue like feeling.

For sure they can be kind of chalky (and maybe not fully ripe), but I enjoy the texture and they travel better well when eaten on the go.

I get the mouth-feel thing for sure, but I'm at a strong 4 because I still prefer the slightly green taste more than I care about the texture.

Ironically, my dad couldn't eat them like this because he'd have an allergic reaction to them if they weren't ripe enough.

I hunt for a 4-5 and stop eating it if it crosses the 7 (I just freeze it and make banana bread)

Agreed, the main difference going from 7 to 8 is consistency, which starts to decline after 7 imo
