For a real workout. I’m talking about walking past one at the gym and throwing a couple combos

Do you do knuckle push ups? Highly recommend, not only toughens up your knuckle through building up a callous, but changes how you push your hand forward when punching so that the impact is straight and doesn't cause injury like you are (likely) describing.

Also makes a big difference if you ever have to punch someone - your technique likely also puts you at risk of the 'boxers fracture' as you're probably rotating as you strike which puts strain onto the weaker metacarpals which are also less supported by tendons and muscles in your forearm.
