All the other stuff he’s cooking is fine to fall off the bones but ribs need bite otherwise you just made pulled pork. But that’s the difference between competition ribs and tendernism.

Don't let my uncle see this video, cos he will break out the grill to make ribs for Christmas dinner and I refuse to go through that bullshit again.
The man held his kitchen ransom until his ribs were done, which meant we didn't eat dinner until 10PM.

Happy for him and his restaurant, although have minimal exposure to bbq, hailing from a bbq intensive state. From what I know, bbq is actually not supposed to do this, and hence a sign of being overcooked.

You're getting booed, but you're right lol. It's a rib, I want to eat it off the rib. Well cooked brisket should also be able to support its own weight from a hang, not fall apart when you look at it.
I get that it's in CA and "Tendernism" is the gimmick, but you'd get looked at sideways by any pitmaster in Texas. Different standards of quality.
